Bookmark this guide when cravings hits hard for fresh pasta.

Mmm, pasta. We’ll leave our diets at the door any day for this carby goodness. Sure, we’re all for packaged ones, but there’s just something magical about pasta that’s made from scratch. Maybe it’s the silky smooth texture, the perfect al dente bite or the years of technique and craft packed into one dish. We admit – we’re no pasta experts, but we can all agree that once you’ve had it fresh you can never go back.

So the next time it’s your turn to pick a restaurant for date night or brunch with the girlfriends, head to these restaurants for handmade and fresh pasta in Singapore.

Bar Cicheti

If you’ve tried its sister restaurant, Cicheti (we think about the quattro formaggi pizza every now and then), you’ll love Bar Cicheti. The pastas take centre stage here with superbly crafted, handmade ones made a la minute. Try the Anolini, pockets of pasta filled with creamy taleggio, ricotta and parmigiana, then topped with brown butter sauce, or the hand-rolled pasta, Pici Cacio e Pepe.

Head chef Alessandro Giustetti helms the kitchen at Pasta Bar, a great spot for date night or if you’re just hanging around the vibrant Keong Saik vicinity. Drawing upon his Genovan roots, he brings us 11 dishes featuring freshly hand-pulled pasta, using ingredients like semolina and ‘00’ flours, whole eggs, egg yolks and water. With 11 different otherworldly doughs, no two pasta dishes are the same – so you get a variation of mouth-feel, shape and texture. Try the reginette with rabbit ragu if you’re craving for something new, or the eggless lagane with chickpea for a spicy kick of chilli and garlic.

Pasta Brava

Pasta Brava has a massive menu of pastas, mains and rice dishes and within that, you’ll find a separate section of fresh pasta offerings. It’s great for that one pasta snob in your group. The tortellini with Iberico pork and spinach ravioli are dishes so good they’ll quite possibly leave you in a good mood for the rest of the day.

We told you it was IG-worthy! Photography: Nicole Nithiyah

A display of pasta air drying to perfection is the first thing you’ll notice as you enter Pasta Supremo, which is a testament to its freshness. The restaurant offers three shape varieties – long, short and curly (no fancy Italian names here!) and they’re naturally dyed with egg yolk, blue pea flower, beetroot and activated charcoal. IG-worthiness aside, you get the option to build your own pasta with fusion sauces such as haus marinara, Sichuan peppers, chilli, garlic and duck fat, three mushroom creme and Asian pesto. Alternatively, you can go for the haus pasta dishes. The meat-free Vege Wege Pasta and Truffle Cream are standouts.

Da Luca Italian Restaurant

This charming restaurant in Novena is a rare find. Maybe it’s the exposed brick walls, red checkered table cloth or wood flooring, but it’s like you’re transported to a quaint, homey eatery in Italy. Complete the experience with bites of handmade cold angel hair pasta with scallop or uni caviar truffle pasta.

Publico Ristorante

Deli by day, and Italian cocktail bar by night, Publico Ristorante at Robertson Quay blesses us with contemporary Italian classics, refreshing cocktails and riverside views. Here’s where you can take in the chill vibes as you devour homemade pasta creations such as black truffle tagliatelle, linguine vongole and maccheroncini carbonara. Gluten-free options are also available.
